This is classic dining, revitalized. Great food and attentive service in a beautiful ambience. Creative appetizers, succulent cuts of beef, and decadent home made desserts. The Rimrock can meet your every need; start your day out with breakfast, entertain clients at lunch or meet friends for dinner. Breakfast - Monday to Sunday, 6:30 a.m. to 11:30 a.m. Lunch - Monday to Friday, 11:30 a.m. to 1:30 p.m.* Dinner - Monday to Sunday, 5:30 p.m. to 9:00 p.m.

The Rimrock at the Fairmont Palliser is quite honestly one of the best restaurants I've ever had the pleasure of eating at. It is absolutely not budget-friendly, but it's worth every penny of that splurge. The brunch is amazing, but the true shining star of this restaurant is their Death By Chocolate special. All the chocolate desserts I can eat for one price? Yes please! It was at the Rimrock that I truly learned to appreciate the special combination that is chocolate and merlot. An amazing restaurant in all aspects, and I hope to go back again soon.
