Growing up I knew when it was perogie making day at my house. I would come home from school and see my mom in her white apron standing over a flour covered table and meticulously forming, filling and pinching each perogie to perfection. A pot of boiling water was waiting on the stove. My mouth would start watering and I was filled with hope that we would be eating those delicious perogies for dinner- only to be disappointed when my mom said " No, these are for Christmas" ( or Easter or whatever the special occasion was). Rarely would these be made just for a regular meal and who could blame her, they were tedious and time consuming to make.
Mom passed away on Dec 4th, 1993, but not before making and freezing a stockpile of perogies for us to enjoy on Christmas day. The following year I took out my mom's recipe and began to carry on the tradition for my family.
Now with over 20 years of experience under my apron, and the urging of my family, I have decided to offer my perogies to you.
